Ingredients:
1 or 2 quarts (a sufficient amount) of blueberries
1 container of orange juice concentrate (you can use regular OJ, but concentrate is better)
1 small jar of apricot jam (for example Bonne Maman)
1 large-ish piece of pound cake (I prefer orange pound cake, but really anything is ok including brioche)
Optional granola
Optional grand marnier (maybe 1 tbsp)
STEPS:
First preheat oven to 350
Then in a separate mixing bowl, combine blueberries, oj concentrate, apricot jam
Once fully combined, pour into an oven safe baking dish
In a separate bowl, crush up the pound cake with your hands and crumble into pieces.
If you choose to use granola, add a small amount now (but save a little)
Take the pound cake/granola pieces and sprinkle on top of blueberry mix in the oven safe dish
Sprinkle a little more granola on top (just for extra toasty crunch)
Drizzle grand marnier (again only a small amount) over top of pound cake/granola crumble
Heat in preheated oven (350) for 30-45 minutes (until you see the top is golden brown and the mixture is bubbling - but nothing crazy)
It will take a minute to cool off.
I like to serve with lemon ice cream (but it’s really good on its own)
