Ingredients
- 4 Tbsp canola or olive oil
- 1 Tbsp whole cumin seeds or cumin powder is fine
- 4 cloves chopped garlic
- 14 oz can crushed tomatoes
- 2 Tbsp chopped ginger
- 2 Tbsp ground coriander
- 1 tsp turmeric
- 1 tsp salt
- 1 tsp cayenne pepper (or more if you like it spicy)
- 3.5 cups water
- 1.5 cups red lentils
- 14 oz can coconut milk
- Limes (garnish)
- 1/2 cup fresh cilantro chopped (garnish / optional)
Instructions
- Chop garlic and ginger
- Push saute button on instant pot and let it get hot
- Put in these ingredients:
- Oil
- Coriander
- Cumin
- Tumeric
- Cayenne
- Salt
- Ginger
- Garlic
- Saute for 3-5 mins. Add up to 4 oz water if it starts to get a little sticky
- Add rest of ingredients:
- Coconut Milk
- Tomatoes
- Rest of Water (3.5 cups)
- Lentils
- Saute mixture for 3 more minutes, stirring frequently.
- Lid on Instant Pot and put on manual pressure cook HIGH setting for 6 minutes.
- Vent lid on instant pot
- Get base of white rice (ideally basmati)
- Scoop lentils on top
- Garnish with lime juice, cilantro, hot sauce and salt to taste
