Best Instant Pot Red Lentils

Ingredients

  • 4 Tbsp canola or olive oil
  • 1 Tbsp whole cumin seeds or cumin powder is fine
  • 4 cloves chopped garlic
  • 14 oz can crushed tomatoes
  • 2 Tbsp chopped ginger
  • 2 Tbsp ground coriander
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tsp cayenne pepper (or more if you like it spicy)
  • 3.5 cups water
  • 1.5 cups red lentils
  • 14 oz can coconut milk
  • Limes (garnish)
  • 1/2 cup fresh cilantro chopped (garnish / optional)

Instructions

  1. Chop garlic and ginger
  2. Push saute button on instant pot and let it get hot
  3. Put in these ingredients:
    1. Oil
    2. Coriander
    3. Cumin
    4. Tumeric
    5. Cayenne
    6. Salt
    7. Ginger
    8. Garlic
  4. Saute for 3-5 mins. Add up to 4 oz water if it starts to get a little sticky
  5. Add rest of ingredients:
    1. Coconut Milk
    2. Tomatoes
    3. Rest of Water (3.5 cups)
    4. Lentils
  6. Saute mixture for 3 more minutes, stirring frequently.
  7. Lid on Instant Pot and put on manual pressure cook HIGH setting for 6 minutes.
  8. Vent lid on instant pot
  9. Get base of white rice (ideally basmati)
  10. Scoop lentils on top
  11. Garnish with lime juice, cilantro, hot sauce and salt to taste
